green onions, sliced

red pepper, finely diced (save the stem)

finely shredded sharp cheddar cheese, divided

Using an electric or stand mixer, mix the cream cheese, ranch seasoning mix, green onions and 1 cup of the cheese until well combined. Add the red peppers and mix slowly until just incorporated.

Lay out a double sheet of Glad wrap and sprinkle with the remaining cheese. Turn the cream cheese mixture out onto the cheese-covered wrap and wrap into a ball, making sure all sides of the ball are coated with the cheese as you wrap.

Take the rubber bands and double wrap them around the ball, crossing over each other, in four different places spaced equally apart, so you have 8 sections between the indentations.

Refrigerate for at least two hours, up to overnight.

When ready to serve, remove the bands and the wrap, and top with the reserved pepper stem. Serve with crackers and vegetables
