These are so quick and easy to make as a side dish for a meal when you can't think of anything else to make and the kids are starting to complain about boxed mashed potatoes again.
If you want to dress them up a bit, when they are all done baking, push them towards the center of the baking pan and top with shredded cheddar cheese, some sliced green onions and bacon crumbles if you have them. Bake another 5 minutes to melt the cheese. Garnish with sour cream and serve.
