almond flour ¾ cup
Parmesan cheese ½ cup
large eggs 2
unsweetened ketchup (optional) ¼ cup

Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and set aside.

In a large bowl, combine all ingredients except ketchup until well blended, taking care not to overmix. Transfer the mixture into the loaf pan.

Bake for 40 minutes. Remove from oven and if using, spread the top with the ketchup. Return to the oven and bake for another 20 minutes, until cooked through and internal temperature reaches 160°F. If you don’t want to use ketchup, bake for 60 minutes total.

Let rest for at least 10 minutes before slicing.

Still came out great. I never thought about putting ranch dressing in meatloaf. I had also switched to sugar free Ketchup a year ago and you cannot tell the difference in taste.
