Loaded Ranch Potato Dip

1 large russet potato
16 ounces sour cream
1 packet (1 ounce) Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Packet
½ pound cooked bacon, crumbled
1 cup shredded cheddar cheese
2 tablespoons chopped chives
kosher salt and freshly ground pepper, to taste
Step 1Microwave potato for 6 to 8 minutes or until soft and cooked through. When cool enough to handle, scoop out the insides, discarding the skin.
Step 2In a large mixing bowl, mash the potato until smooth, then add the sour cream and seasoning mix. Stir in the bacon, cheese, chives, and season with salt and pepper, if needed. Serve with potato chips.
