diced dill pickles ¾ cup

In a large mixing bowl, combine the potatoes, onion, celery, eggs and pickle, and stir gently to combine. Mix together the pickle ranch dressing, mayonnaise, sour cream, mustard and lemon juice in a small bowl and pour over the potato salad.

Gently stir to combine everything together, coating the potatoes and vegetables evenly without breaking everything up too much. Season to taste with salt and pepper. Chill until ready to serve.

My grandkids love dill pickles and this potato salad had them all eating without any fuss. I added a little more dill to the mix and I used regular mustard instead of dijon mustard since I was feeding this to toddlers. Even with the adjustments to the recipe it turned out really good and I would definitely make this again.
