Ranch Chicken Meatballs

egg, lightly beaten

breadcrumbs

grated parmesan cheese

Add the chicken, egg, breadcrumbs, Ranch seasoning and Parmesan cheese to a mixing bowl. Mix with your hands, being careful not to overmix.

Carefully form meatballs that are about the size of golf balls; you should get about 24–26.

Heat enough olive oil to cover the bottom of the pan by ¼ inch in a nonstick skillet set over medium heat.

Add the meatballs in a single layer (you may have to do this in two batches) and cook until they are browned on all sides and cooked through, about 8–10 minutes.

Garnish with diced parsley or your favorite herb.

Air fry variation: Preheat the air fryer for 400°F. Working in batches, space the meatballs out in the tray of the air fryer. Cook for 8–10 minutes until cooked through.
Oven variation: Spread meatballs out on a parchment-lined baking sheet. Bake for 20–25 minutes in a 400°F oven until cooked through.
