Ranch & Chile Chicken Enchiladas

    Preheat the oven to 350°F.
  2. 2
    In a medium bowl, combine the chicken, ¾ cup of the cheese, dressing, sour cream and green chiles and stir until well blended. Divide the mixture evenly between the tortillas, and roll the tortillas.

    Place the tortillas, seam side down in an oiled 9-inch baking dish. Spoon the enchilada sauce around the tortillas and top with the remaining cheese.

    Bake for 20 minutes or until the cheese is melted and is bubbly.

I didn't have any Rotisserie Chicken on hand, so I boiled 3 med-lrg chicken breat in salted water that I added some of the chicken stock to & boiled 10-15 min. til done. Shredded with 2 forks. I got 4 C. of chicken (I almost doubled recipe, but didn't on the sour cream) I added 1 C of the Ranch Dressing, 8 oz of Sour Cream & I used the chopped green chiles & just added the whole can, nothing to rinse or chop. I also added about 2/3 C of Tostidos Medium Salsa & then added the shredded Monterey Jack AND Sharp Cheddar cheeses & put not quite half that mixture in the chicken mixture. I sprayed my pan, then put a little of the enchilada sauce in the bottom. I dipped the tortillas in the chicken stock & drained well before adding the chicken mix., rolled em up & put em in the pan, seam side down. Covered with the enchilada sauce, then the rest of the cheese & baked aprx 22- 25 min. YUMMY!!! My Family LOVES this recipe!! Thanks so much for sharing!

Dipping your tortillias in water or chicken broth helps to keep them from drying out while baking. This is a must try recipe! Also, heavy cream poured over the top before baking helps to keep it from drying out. Yummo!
