We love a good shortcut to dinner recipes. And by shortcut, we mean finding something already cooked, like a rotisserie chicken, or grabbing pre-made freezer fare and pairing it with simple homemade veggie side dishes.
In fact, vegetable side dishes — crisp, roasted potatoes, vegetable gratins, crunchy salads and sautéed greens — are a great way to add some pop and variety to your meals. And with the addition of seasonings like ranch, they couldn’t be easier to prep.
Take your favorite veggie — broccoli, Brussels sprouts, cauliflower, carrots, potatoes or sweet potatoes – toss them with olive oil and ranch seasoning, and roast in the oven for 20–25 minutes. It’s that simple. Looking for a challenge? Make a veggie “salsa” to serve as a side dish for chicken, steak or ham, by tossing chopped onions, corn, peppers, cucumbers or tomatoes with olive oil, a splash of lime juice, and a dash of ranch.
