- 1 cup feta cheese crumbled
- 1 cup tomatoes seeded, diced
- 1 tablespoon fresh mint chopped, or 1 tsp. dried mint
- ½ cup red bell pepper diced
- ½ cup red onion diced
- ¾ cup Hidden Valley® Farmhouse Originals Pomegranate Vinaigrette
- 5 cups cucumbers diced
- 1. In a large bowl, combine all ingredients and toss.
- 2. Serve with pita chips.
