Thai Beef Salad

- 2 tablespoons 
- mayonnaise - 1 cup 
- unsweetened coconut milk - ½ cup 
- roast beef, thinly sliced - 1 pound 
- English cucumber, thinly sliced - 4 ounces 
- fresh bean sprouts - 1 cup 
- chopped peanuts and cilantro, optional

- 1In a small bowl, combine seasoning mix with mayonnaise and coconut milk until well blended and chill, covered, for at least 30 minutes. 
- 2Arrange beef, cucumber slices, and sprouts on large platter. Drizzle the dressing over the salad. Garnish with the peanuts and cilantro, if using, and serve.
