¾ cup
kosher salt and freshly ground black pepper, to taste
shredded cheddar cheese
1 cup
sliced green onions and/or bacon pieces, for garnish, optional

For dips, make and enjoy your dip creation. Then, refrigerate within 2 hours or discard.
Preheat oven to 375°F.
Halve potatoes lengthwise, cut halves into quarters, and scoop the potato out of skins. Place potatoes in a medium bowl and stir in ½ cup of dressing until smooth and fluffy; season with salt and pepper.
Coat inside of skins with the remaining ¼ cup dressing; spoon potato-mixture back into skins. Sprinkle potatoes with cheese.
Bake for 10 minutes or until cheese is melted. Garnish with green onions and/or bacon bits, if desired.
