Cheesy Mediterranean Turkey and Pasta Bake


Ingredients(6)
- olive oil - 1 tablespoon 
- diced red bell pepper - ½ cup 
- cooked orzo - 2 cups 
- shredded, cooked turkey - 3 cups 
- ½ cup 
- shredded Swiss cheese - ½ cup

- 1Preheat the oven to 350°F. 
- 2In a large pan, heat the oil over medium heat, add the peppers and cook for 5 to 7 minutes or until softened. Stir in the orzo, turkey and dressing and stir evenly to coat. 
- 3Place the mixture into an oiled 8x8-inch baking dish and top with the cheese. 
- 4Bake for 20 minutes or until the cheese has melted and is lightly golden. Let stand for 5 minutes before serving. (For an added pop of color, garnish with chopped parsley).
