Garden Valley Ranch Bread

    Preheat oven to 375°F. Grease an 8-by-8-inch baking dish.

    In a large microwave-safe bowl, melt butter. Mixing after each addition, add the seasoning mix, broccoli, corn, eggs, cottage cheese and finally the corn muffin mix, stirring just until moist.

    Transfer mixture to the greased baking dish. Bake for 30 to 35 minutes or until golden brown.

Rated 5 out of 5 by from Hearty good bread I made this last week as a side for some roasted lamb and we ate the whole loaf! The cottage cheese gives the cornbread good moisture and the bits of broccoli are a nice treat.
