Loaded Ranch Potato Dip

large russet potato

sour cream
16 ounces
1 seasoning packet or 3 tbsp of shaker seasoning
cooked bacon, crumbled
½ pound
shredded cheddar cheese
1 cup
chopped chives
2 tablespoons
kosher salt and freshly ground pepper, to taste

Microwave potato for 6 to 8 minutes or until soft and cooked through. When cool enough to handle, scoop out the insides, discarding the skin.

In a large mixing bowl, mash the potato until smooth, then add the sour cream and seasoning mix. Stir in the bacon, cheese, chives, and season with salt and pepper, if needed. Serve with potato chips.
